Maman’s Beef & Peppers

Thursday I was supposed to have a doula come over. I did slack a bit since my last cleaning spree, so since I was expecting company I decided to just stop being lazy and get back in the swing of being productive. I turned on some Funkadelic and cleaned my living room, put Christmas decorations away (shhh!), and got the kitchen super shiny looking. It’s not much, but it is more than I’ve been doing the last few days. Of course my doula came down with a cold and rescheduled…

I also busted out the crock pot, which I hadn’t done in a while. I used to use it at least two or three times a week, but like I said… I’ve been slacking. Recently my mom gave me a whole list of easy pot roast ideas for the crock pot. My grandmother on my mother’s side has lots of simple meals up her sleeve. Several of them she won’t share with just anyone. However,  hidden in the list my mom gave me was the following recipe for Maman’s Beef and Peppers. Don’t tell Maman I told you…

 

Maman’s Beef and Peppers

  • 4 pounds beef roast
  • 1 bag of frozen peppers and onions
  • 1 can tomatoes
  • 1 tbsp Italian seasoning
  • 1 tsp garlic

Throw everything into your crock pot and cook on low for 8 hours and serve over whatever you feel like making.

I personally dig this pot roast recipe with rice. 🙂

I am not trying to sound lazy or anything, but I don’t know how you normal, perky housewives keep everything so tidy all the time. Two days later and I’m thinking “jeez, do I really have to vacuum again?” At least my Valentine’s Day flowers are still alive and kicking.   8. Adorable flowers and super easy recipe. I rarely use my crock-pot anymore since I’m only cooking for two. I otherwise I always end up making way too much.
