Dairy Free Chocolate Chip & Pecan Cookies for Gaia’s Pre-K Graduation

My baby graduated Pre-K yesterday. The ceremony was adorable and I am so proud of my little girl. She’s growing so fast! It was nice celebrating everything she’s accomplished and imagining all the lovely things she’s going to do with the rest of her life. I’m going to cry like a baby when she starts school in the fall.

After the ceremony there was a potluck. I am so glad I made these cookies because all I could eat were these delicious babies and a fit full of meatballs.

Dairy Free Chocolate Chip & Pecan Cookies


  • 3/4 cup butter flavored shortening
  • 1 1/4 cups firmly packed light brown sugar
  • 2 Tbsps. milk alternative (I used coconut milk)
  • 1 Tbsp. vanilla extract
  • 1 large egg
  • 1 3/4 cups all purpose flour
  • 1 tsp. salt
  • 3/4 tsp.baking soda
  • Amanda’s Own dairy-free chocolate chips
  • a handful of chopped pecans


    1. Preheat oven to 375 degrees (F). Per-line parchment paper on a cookie sheet.
    2. Using an electric mixer, beat shortening and brown sugar. Add milk, vanilla, and egg. Mix on medium speed until incorporated.
    3. Mix in dry ingredients. Add chocolate chips and pecans.
    4. Drop cookie mix on your parchment paper about 2″ apart. Bake for 11-13 minutes. This makes about 26 cookies for me.

I loved using Amanda’s Own chocolate chips. These aren’t only dairy free, but also tree nut free, peanut free, egg free and gluten free. I used them in our pancakes, my “don’t let the bananas go bad” baking spreed this week, and in chocolate chip doughnut bites. The only difference were in my banana chocolate chip muffins… when the muffins were warm the chocolate chips on the edge wanted to come off on the wrapper instead of stay with the muffin. We didn’t have this problem the next day when they were completely cool though, so not enough to complain about really!

I’m pretty sure our family ate half the cookies I took to graduation with us. No guilt though, no not from this mama! 🙂

  3. She is so cute! I cried so bad at Natty’s pre-k graduation. I was pregnant too at the time so some of that was from hormones. But they grow up so fast. And those cookies look yummy!

  4. Sorry, I am not sure how these can possibly be dairy free, when you use 2 T of milk, unless you use an alternative milk
