Omi’s Naked Mice Recipe (no mice needed)

I hope all you wonderful mamas had a fabulous day today. I didn't do anything out of the ordinary really, but my baby must have gotten special vibes because he let me nap and have a pretty fuss-free day. I am glad I saved some dairy-free chocolates, too. The urge to cheat was intense today, let me tell you. One thing that is easy about going dairy free is that I can still eat all the meat I want. I'm definitely a carnivore and so most of my diet is meat-based anyway. Since going dairy free I've been eating more veggies, for sure. But meat... meat is on my list of most favorite foods after baked goods. My mother was here to visit a few weeks … [Read more...]

Dairy Free Chocolate Chip & Pecan Cookies for Gaia’s Pre-K Graduation

My baby graduated Pre-K yesterday. The ceremony was adorable and I am so proud of my little girl. She's growing so fast! It was nice celebrating everything she's accomplished and imagining all the lovely things she's going to do with the rest of her life. I'm going to cry like a baby when she starts school in the fall. After the ceremony there was a potluck. I am so glad I made these cookies because all I could eat were these delicious babies and a fit full of meatballs. Dairy Free Chocolate Chip & Pecan Cookies Ingredients: 3/4 cup butter flavored shortening 1 1/4 cups firmly packed light brown sugar 2 Tbsps. milk alternative (I … [Read more...]

My First Try at Dairy-Free Banana Bread

Anders may or may not have a dairy sensitivity. My midwife said I would see results in 4-7 days, but I've decided I can't do eggs right now so I'm cutting out mammalian products for this first week. The first day was hard and I cheated a little throughout. I guess it wasn't really day one if you think about it, but I was consciously trying to avoid certain foods and for the most part I felt successful. From there everything got easier. The more research I do, the more familiar I become with brands and various milk proteins, the more I am considering making this dairy-free diet a new lifestyle. Dairy isn't really that good for you anymore and … [Read more...]

Nutella Banana Swirl Bread

I had a horrible day yesterday. It was World Nutella Day though, so despite everything that went wrong, I still managed to throw something together to celebrate. I searched Pinterest for a while before settling on Nutella Banana Bread. Here's the recipe in case you want to make your own: Nutella Banana Bread Originally posted by Pia Recipies Ingredients: 2 cups flour 3/4 tsp. baking soda 1/2 tsp. salt 1/4 cup butter softened 1 cup sugar 2 large eggs 1 1/4 cup mashed ripe bananas 1 tsp. vanilla 1/3 cup milk 3/4 heaping cup Nutella Directions: Preheat oven to 350 degrees. Spray 8×4-inch loaf pan with nonstick spray. In a … [Read more...]

Maman’s Beef & Peppers

Thursday I was supposed to have a doula come over. I did slack a bit since my last cleaning spree, so since I was expecting company I decided to just stop being lazy and get back in the swing of being productive. I turned on some Funkadelic and cleaned my living room, put Christmas decorations away (shhh!), and got the kitchen super shiny looking. It's not much, but it is more than I've been doing the last few days. Of course my doula came down with a cold and rescheduled... I also busted out the crock pot, which I hadn't done in a while. I used to use it at least two or three times a week, but like I said... I've been slacking. Recently my … [Read more...]

Week 3 Pinterest Round-Up

I worked a bit independently this week for my shop. I'm trying desperately to get ready for both Valentine's Day and Dental Hygiene Month, but for some reason kitchen crafting with food is coming a lot easier than sewing or crocheting or even paper crafts. I mainly used Pinterest for inspiration and tried to make minimal trips to the store this week. I did follow the entire recipe for Grown Up Macaroni and Cheese, but I have to say it didn't turn out as good as I would have liked. There was so much cheese in the end! I would definitely suggest that a whole box of pasta should be used. Hutch also says it needs twice as much bacon, but he's a … [Read more...]

How to Make Your Own Ice Cream Cake

Hutch's birthday was on Saturday and I'm really bad at procrastinating so I got a head start on his cake. Good thing too because it was nearly a failed disaster! If you're in the market to make your own ice cream cake, I suggest doing this with several hours to spare because things like softening and hardening ice cream and baking and cooling cakes can be time consuming. Giving yourself a few days is smart. I only saved this one because I had tons of time on my hands and super-love determination. If you're wondering why I'm making ice cream cakes in January it is because the sunshine state is an annoying 80 degrees in the middle of winter. … [Read more...]

Week 2 Pinterest Challenge

I didn't craft diddly this week. I did work a tiny bit on the scarf I was making last week, but I haven't done anything past that. However, I was totally feeling my kitchen and I made all kinds of delicious things. I made taco soup (that was a majority of what we ate this week - so easy and good and reheats nicely!) and asparagus stuffed chicken... Both of those recipes I found on Pinterest. I also found some better than Starbucks iced coffee. I've been craving coffee a ton this pregnancy and so I found this recipe and I made it work for us. Hutch like sit a lot, too, because he doesn't have time to brew coffee int eh morning. I've been … [Read more...]

Christmas Cookie Swap

Back in November I signed up for this Christmas Cookies swap with Julie at White Lights on Wednesday and all her fun foodie blog friends. In the days awaiting my recipe in the mail I just kept thinking "please not sugar cookies, please not sugar cookies, PLEASE NOT SUGAR cookies." See folks, I like to bake, and I can make an un-cracked cheesecake last minute look easy. But I can not do sugar cookies. I have no idea why. I have tried them several times in several different ovens with no success. It's my all-time mom failure... my child will never decorate cookies for Christmas. I suck that way. So I go t the mailbox and I open my letter. … [Read more...]

Halloween Goodies

Gaia has a little Halloween party tomorrow at VPK, so I decided to make cupcakes. I had everything I needed already for this Pumpkin Cupcake recipe, so it worked out. The only thing I bought were the candy corns. I've actually never decorated cupcakes before aside from sprinkles, so it was pretty fun. I know they aren't very scary, but I think they're totally fall-themed so it works out. Pro tip: I use laptop-like boxes for my cupcakes. They have efficient room so the decorations don't get ruined and they're easy to open and to leave out for display. Have you made treats for your child's Halloween party? Share your creativity in the … [Read more...]
